FRIDAY FOOD THING
I have been experimenting with the inexpensive, single-serving, next-generation-up Ramen-type noodle soups from “Simply Asia Foods” that have been on grocery store shelves for a while now. My favorite is their “Spring Vegetable Rice Noodle Soup Bowl”, but not straight from the carton.
I discard the oil packet outright, use about 1/2 the powdered seasoning mix, and add to it fresh chopped chives (or green onions), some frozen corn and peas, and — if I’m lucky — several medium-sized frozen shrimp, cut into about 3 pieces, each. Almost anything can be added to the soup. Be creative.
The mix comes with its own plastic cooking/serving bowl, but I prefer to microwaving the soup in a covered glass Pyrex bowl (3 minutes on high). The instructions suggest letting the soup stand for a couple minutes before serving, and so do I.
