It’s about time to harvest the last of the basil for the summer. You can freeze it, for that fresh taste through the winter. Just pick off the leaves and place them on a Styrofoam tray. Brush them off if necessary, but do not wash them. Place the tray in the freezer for an hour or so, until the leaves are frozen crisp. Then empty the frozen leaves into a Ziploc bag (work quickly, as they thaw out fast) and put it in the freezer. Remove a few leaves as needed for your cooking through the winter – tastes just like fresh!

Tim says: this works, I guarontee it. It keeps forever. Quickly crush the basil when still frozen — instant chopped basil.
